Easy Parmesan Roasted Prawns with Roasted Broccoli and Parsley Couscous


Hey, there. If you're reading this, I hope you are having an amazing week. My week has been great, so far and I have no doubt the rest of it will be just as great. Attitude is everything :)

I'm really excited about sharing the recipes that make this dish come together. It's delicious and takes hardly any time to put together. It is also easily multiplied, so it's great if you are having people over, but don't want to spend all your time in the kitchen. More time for wine and chit chat :)

Parmesan Roasted Prawns:

・1lb of king prawns, peeled and deveined

・1 tbsp of olive oil

・2 cloves of garlic, minched

・1/2 tsp of dried oregano

・1/2 tsp of dried basil

・1/4 cup of parmesan cheese, grated

・1/2 tsp of salt

・1/4tsp of pepper

・1/2 lemon, juiced

・2 tbsp of parsley, chopped

Directions:

1) Preheat oven to 400F

2) Line a rimmed baking sheet with foil or parchment paper

3) Place Prawns in a large mixing bowl with olive oil, garlic, oregano, basil, parmesan cheese, salt, pepper, and lemon juice. Toss to combine

4) Place in the oven and roast for 8-10 min. until no longer transparent.

5) garnish with parsley

Roasted Broccoli:

・broccoli

・olive oil

・salt and peper, to taste

Directions:

1) Preheat oven to 400F

2) Place broccoli in a roasting tin, or a rimmed baking sheet.

3) Drizzle with olive oil and season with salt and pepper, to taste

4) Roast in the oven for 10min.

Parsley Couscous:

・1 1/2 cups of chicken broth

・1 cup of couscous

・2 tbsp of parsley, chopped finely

・2 1/2 tsp of butter

Directions:

1) Bring the chicken broth to a boil in a medium saucepan.

2) Add the couscous and cook according to package instructions.

3) Once all the liquid is absorbed, fluff with a fork

4) Stir in the parsley and butter
